Soup Recipe

February 20, 2018Bruce, a member, likes to make soup. This is his most favorite recipe.
Purchase from Sam’s club or any other location a plain rotisserie chicken.
Place chicken in pot with:
- Drippings from chicken
- 2 – 3 whole carrots
- 2 – 3 stalks of celery
- (1) 32 oz. box of chicken stock/broth
- 1 medium onion
Bring to boil, reduce heat, cover, and simmer for 1 to 2 hours or until the chicken meat starts to fall off the bones.
Drain liquid off and place in refrigerator overnight until fat floats to surface and hardens.
Skim off fat. Break up chicken meat, cut carrots, celery, and onions into small pieces and place in chicken stock.
Cook noodles (Bruce likes Mrs. Weiss’ Kluski egg noodles) in water separate from soup.
Warm soup/ vegetables/chicken, ladle into bowl, add noodles, salt/pepper to taste.
