Kona Ice and Luau

July 12, 2018This week were honored and blessed to have Sara Matthews bring her Kona Ice truck to our first annual luau! Sara spoke to our group and explained how she began her franchise business, and how Kona ice is healthier than a traditional snow cone. She even let us into the back of the truck to see how the whole thing works! We enjoyed samples and loved creating our own custom flavors from the FLAVORZONE! Afterwards, we enjoyed a potluck lunch with Vivian’s famous pineapple bake. This dish is perfect as a side dish with ham but we all enjoyed it all by itself! The recipe is here:
VIV’S PINEAPPLE BAKE
Mix together:
2 TBS Cornstarch
¼ Cup water
Add:
2 beaten eggs
1t. vanilla
1 large can crushed pineapple (partially drained)
½ C Sugar
Mix well and put in casserole dish. Top with cinnamon and dot with butter. Bake uncovered at 350 degrees for 45 minutes to 1 hour.
